- 1/2 cup chocolate chips
- 3 eggs, separated
- 1/2 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla
- 1/4 cup cocoa
- 3 cups coconut
Directions:
- In a double-boiler, melt the chocolate chips. Mix in the eggs yolks, whisk rapidly until fully incorporated. Remove from heat.
- In a separate bowl, beat egg whites until stiff. Add in sugar, salt, vanilla and cocoa. Mix well. Add in coconut.
- Stir melted chocolate into the coconut mixture.
- Drop by spoonfuls onto a cookie sheet.
- Pre-heat oven to 325F. Bake for 15 minutes. Allow the cookies to cool on the cookie sheet.
