Ingredients:
- 1 package cream cheese (250g), softened
- 1 tsp vanilla
- 4 cups coconut
- 1 1/2 cups chocolate chips
- 1 bar (approx. 150g) of dark chocolate (or any other type of chocolate of your choice)
Directions:
- Beat the cream cheese and vanilla until smooth.
- Stir in the coconut.
- Form into 1" balls and place on a baking sheet. Refrigerate for at least 30 minutes.
- In a double boiler, melt the chocolate chips and chocolate bar.
- Roll the balls in the melted chocolate until fully coated and place them on a lined baking sheet.
- Put them back in the fridge until the chocolate solidifies.
