Apple Cranberry Cobbler


Buttermilk Recipe #4: this looks to be the last buttermilk recipe in this series, although I'm quite sold on buttermilk as an ingredient in baking.  I've tried replacing it for regular milk in a few other recipes and have been quite pleased with the results.  But enough rambling, on to the cobbler!  : )

Ingredients:
  • 6 apples, choppedchocccc    ch , ch,,,apple
  • 1 cup cranberries, fresh or frozen
  • 1/3 cup brown sugar
  • 1 tbsp tapioca starch (or glutinous rice flour will work)
  • 1/2 cup white rice flour
  • 1/2 cup glutinous rice flour
  • 1/4 cup white sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt pinch
  • 1/4 cup butter, cold
  • 1/2 tsp cinnamon
  • 3/4 cup buttermilk
Directions:
  1. Toss chopped apples and cranberries with brown sugar and tapioca starch.  Put in an 8" square baking dish.
  2. In a mixing bowl, combine flours, white sugar, baking powder, baking soda, salt and cinnamon.  Cut in butter to make a crumbly mixture.
  3. Stir in buttermilk with a fork to make a sticky dough.  Drop by spoonfuls over fruit.
  4. Bake at 400 degrees F for 30 - 40 minutes or until the top is a nice golden brown.
  5. Serve as is or with whipped cream or ice cream...anyway you eat it, it's delicious!  : )

  1. A nice twist on the good old fruit crisp* I've made a few crisps lately, with apple season and all. Ivan & my parent's new place both have apple trees. I've found adding walnuts is a great trick to bring out a bit of the crunch ;)
