Buttermilk Snickerdoodles



Recipe #3: A hydrid cookie that's a cross between a sugar cookie and a snickerdoodle.  It's light, fluffy and must-try for everyone!  Definately going to be a regular cookie in my freezer from now on!  : )

Ingredients:
  • 1/2 cup butter, softened
  • 1/2 cup cinnamon sugar (1/2 cup white sugar, 1 tsp cinnamon, 1/2 tsp nutmeg)
  • 1 eggs
  • 1 1/4 cup white rice flour
  • 1 1/4 cup glutinous rice flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 tsp vanilla extract

Directions:
  1. Cream butter and sugar together.  Add in egg.
  2. In a separate bowl, combine flours, baking powder, baking soda and salt.
  3. Slowly add dry ingredients to wet mixture until it makes fine crumbs.  Pour in buttermilk and vanilla.  Beat until well mixed.
  4. Drop by teaspoonfuls onto a cookie sheet.
  5. Bake at 425 degrees F for 5 minutes, watch carefully, they will burn quickly!

  6. Yield: 3 dozen

  1. Snickerdoodles are the cat's pajamas! I didn't know they even existed until a few years ago and they are now my favourite cookie :)
