Recipe #3: A hydrid cookie that's a cross between a sugar cookie and a snickerdoodle. It's light, fluffy and must-try for everyone! Definately going to be a regular cookie in my freezer from now on! : )
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup cinnamon sugar (1/2 cup white sugar, 1 tsp cinnamon, 1/2 tsp nutmeg)
- 1 eggs
- 1 1/4 cup white rice flour
- 1 1/4 cup glutinous rice flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 2 tsp vanilla extract
Directions:
- In a separate bowl, combine flours, baking powder, baking soda and salt.
- Slowly add dry ingredients to wet mixture until it makes fine crumbs. Pour in buttermilk and vanilla. Beat until well mixed.
- Drop by teaspoonfuls onto a cookie sheet.
- Bake at 425 degrees F for 5 minutes, watch carefully, they will burn quickly!
Yield: 3 dozen
Snickerdoodles are the cat's pajamas! I didn't know they even existed until a few years ago and they are now my favourite cookie :)
