Back this train up...are those gluten-free pizza pops?!?!

It's true folks...gluten-free pizza pops are possible!  Much to the joy of every gluten-free teenager everywhere, these are easy enough to make at home any day of the week!  : )


Disclaimer: This is not actually a rice flour recipe, although it is gluten-free...just giving you a heads up.  It uses black lentil flour (although I suspect many other bean flours would also work well: soya flour, chickpea flour, etc.).  I found this flour adds the heft that rice flour often lacks and it holds together really well, which for a hand held food item like this, is what you're looking for.

Ingredients:
  • 2 cups black lentil flour (you can find this in the asian aisle with all the various bean flours)
  • 1/2 tsp salt
  • 2/3 cup water
  • 1 tsp oil
  • 1 tsp vinegar
  • white rice flour (enough to dust the counter with)
  • pizza sauce
  • pepperoni
  • cheese
  • any other filling ingredients you want!

Directions:
  1. Stir together flour and salt.  Add in water, oil and vinegar and stir until you have a sticky dough.
  2. Dust the counter well with white rice flour and scrape out the dough.  Use the flour to help form the dough into a ball.  Roll it out with a well floured rolling pin.  Don't roll the dough too thin as it will make leaky pops, keep it about 1/4" thick.
  3. Use a large soup bowl or other round object to cut out large circles, depending on the size you cut out you should get around 5 or 6 pops.
  4. Spread sauce on half each pop, top with pepperoni, cheese and any other filling ingredients you want.  Keep the filling away from the edge of the pop so it will seal.
  5. Wet your finger and run it around the edge of each pop before you fold them over and press the edges together.  This will help the pops seal better.
  6. Put the pops on a greased cookie sheet and bake at 400 degrees F for 10 to 15 minutes, watch for the dough to turn golden and for any signs of bubbling filling.
