Okay, so I have to admit to being a bit of a craisin and cinnamon addict. ; ) Sorry if those aren't your ingredients of choice. However if chocolate is more your thing, this recipe works well to just swap chocolate chips for the craisins!
Ingredients:
- 1 1/4 cup white rice flour
- 1 1/4 cup glutinous rice flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp brown sugar
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup craisins (or chocolate chips)
- 1/4 cup sliced almonds
- 1 egg
- 3/4 cup milk
- 2 tbsp oil
- 1 tbsp brown sugar
- 1 tbsp white sugar
- Mix flours, baking powder, salt, brown sugar, cinnamon and nutmeg.
- Add in egg, milk and oil. Mix by hand just until all ingredients are combined (you make just want to literally dig in and use your hands to mix rather than a mixing spoon - I found that much more effective).
- Add in craisins (or chocolate chips) and almonds.
- Sprinkle the second meaurement of brown sugar on top and then the white sugar (this will give it a nice toasty colour plus a little sparkle!). If you are a cinnamon and/or nutmeg fan as well, you can add top the whole thing off with a light dusting of either (or both!).
- Pat the dough out on a cookie sheet into a circle. You can make it as thick or thin as you would prefer, just adjust your baking time accordingly. I usually make an 8" - 9" round scone.
- Bake at 350 degrees F for 20 - 25 minutes.
If you're not sure what exactly to do with a scone, here are my suggestions:
- Cut it into triangle wedges just like a cake or pie (I usually do 6 or 8 pieces on a scone this size).
- You can cut an individual wedge open like a hamburger bun and spread butter, cream cheese, jam, honey or nutella...or whatever strikes your fancy!
- OR you can just eat the scone as is, no slicing, no spreading. I find them pretty delicious straight up with a nice cup of coffee! : )
