Apple Crisp Muffins

For 2nd Advent I'm tackling some Christmas breakfast recipes.  First up is a slightly different take on standard apple muffins.  I usually make mine with grated apple and raisins, but for this recipe I used applesauce and craisins to try and get a slightly more festive flavour.  I found them to be a little more dense rather than fluffy, but WOW did they both smell and taste GREAT!  Definitely an awesome breakfast treat to wake up too!

Ingredients:
  • 3/4 cup white rice flour
  • 3/4 cup glutinous rice flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 3/4 cup butter
  • 1 cup applesauce
  • 2 eggs, beaten
  • 1/2 cup craisins
  • 2 tbsp white sugar
  • 1 tsp cinnamon
Directions:
  1. Mix flours, brown sugar, baking powder, salt and cinnamon.
  2. Cut in butter to make a crumbly mixture.  Set aside 1/4 cup of this mixture to top the muffins.
  3. Add applesauce and eggs to the remaining flour mixture.  Blend well.
  4. Stir in craisins.
  5. Fill muffin tins 2/3's full. (Makes about 18 medium-sized muffins)
  6. Mix the crumb mixture you set aside with the white sugar and second measurement of cinnamon.  Sprinkle this on top of the muffins.
  7. Bake at 400 degrees F for 15 - 20 minutes or until a toothpick comes out clean.
