Ingredients:
- approx. 8 slices of gluten-free bread (you can buy this at most supermarkets either in the freezer section or some even have it in their bakery section)
- spreadable cream cheese (the quantity and flavour are up to you), I used about 2 tbsp of plain cream cheese
- 1 cup of warm milk
- 2 eggs
- 1/4 cup white sugar
- 1 tsp vanilla
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1 cup fresh or frozen berries
- 2 tbsp brown sugar
- Spread the cream cheese on the slices of bread, apply as much as you like.
- Cut the bread into small cubes and place in the bottom of an 8" x 8" baking pan.
- Mix the milk, eggs, sugar, vanilla, nutmeg and cinnamon together. Pour over the bread.
- Pat any pieces of bread down so they can soak up the milk mixture. Top with the berries and sprinkle the brown sugar over the whole pan.
- Bake at 350 degrees F for 40 - 45 minutes.
For something extra special, try serving this with egg nog ice cream!
