Cream Cheese Berry Bread Pudding

Week 2 of the Christmas marathon of recipes has come to an end with a cream cheese berry bread pudding that is now easily one of my favourites!  : )  It turned out great and is so delicious I don't know if I could ever go back to just plain bread pudding!

Ingredients:
  • approx. 8 slices of gluten-free bread (you can buy this at most supermarkets either in the freezer section or some even have it in their bakery section)
  • spreadable cream cheese (the quantity and flavour are up to you), I used about 2 tbsp of plain cream cheese
  • 1 cup of warm milk
  • 2 eggs
  • 1/4 cup white sugar
  • 1 tsp vanilla
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 cup fresh or frozen berries
  • 2 tbsp brown sugar
Directions:
  1. Spread the cream cheese on the slices of bread, apply as much as you like. 
  2. Cut the bread into small cubes and place in the bottom of an 8" x 8" baking pan.
  3. Mix the milk, eggs, sugar, vanilla, nutmeg and cinnamon together.  Pour over the bread.
  4. Pat any pieces of bread down so they can soak up the milk mixture.  Top with the berries and sprinkle the brown sugar over the whole pan.
  5. Bake at 350 degrees F for 40 - 45 minutes.
For something extra special, try serving this with egg nog ice cream!
