Julia's Quinoa Cookies

3/4c. butter (set it out so it can soften first)
1/2c. brown sugar, and 1/2 cup white sugar

* Cream these 1st two ingredients together, then add:
1 tsp. vanilla
2 eggs

*Beat this until smooth. Next, add:
1 cup smooth or crunchy peanut butter, depending on what texture you prefer!
1 cup cooked quinoa
1/2 cup ground flax
1 cup white rice flour (I use the small bags from Superstore ethnic food aisle)
1 cup glutinous rice flour

* Mix well, and then add extras:
1 cup of your choice - I tried 1/2 cup walnuts and 1/4c. chocolate chips and 1/4c. Skor bits, or for a more Christmas-y feel I tried 1/2 cup cranberries & 1/2 c. white chocolate chips. It's up to you, so get creative and use whatever you want to add here:)

Then I bake at 325 / depending on how strong your oven is, maybe 350 F for about 8 minutes.
