Creme de Cacao Truffles

This recipe is naturally gluten-free, but I had to test out my theory on a sinfully delicious chocolate truffle, and this one made the cut!  : )

Ingredients:
  • 1 package of cream cheese, softened
  • 1/2 cup cocoa
  • 1/2 cup icing sugar
  • 3 tbsp creme de cacao
  • 1 cup shredded coconut
Directions:
  1. Mix cream cheese, cocoa, icing sugar and creme de cacao until smooth and well blended.
  2. Refridgerate until firm.
  3. Form into 1" balls and roll in coconut.  Place in small paper cups and serve!
