Why not try some Zesty Orange Almond Biscotti!
Ingredients:
- 1 cup white rice flour
- 1 cup glutinous rice flour
- 3/4 cup tapicoa starch
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 tsp ground pepper
- 1/2 cup butter, melted
- 1 cup sugar
- 2 eggs
- 2 oranges, zested (approx. 2 tsp)
- 1 lemon, zested (approx. 1 tsp)
- juice from 2 oranges
- juice from 1 lemon
Directions:
- Sift together dry ingredients.
- Cream butter and sugar until smooth and fluffy. Add the eggs, one at a time. Beat in the orange and lemon zests and juices.
- Stir in the flour mixture.
- Scrape the dough onto a greased baking sheet and form it into a long flat log.
- Sprinkle with cinnamon and pat almonds on top (make sure to press them in a fair bit or else they will mostly fall off).
- Bake at 350 degrees for 25 minutes.
- Take the biscotti out and let it cool for about 10 minutes, so you can handle it easily.
- Cut the log into 3/4 inch slices. Place the slices cut side down on the baking sheet and bake for another 5 - 10 minutes on each side, until golden brown and crispy.
