Christmas Baking Has Begun!

Looking for something a little different to spice up your Christmas baking repertoire? 

Why not try some Zesty Orange Almond Biscotti!

Ingredients:
  • 1 cup white rice flour
  • 1 cup glutinous rice flour
  • 3/4 cup tapicoa starch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 tsp ground pepper
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 2 oranges, zested (approx. 2 tsp)
  • 1 lemon, zested (approx. 1 tsp)
  • juice from 2 oranges
  • juice from 1 lemon

Directions:
  1. Sift together dry ingredients.
  2. Cream butter and sugar until smooth and fluffy.  Add the eggs, one at a time.  Beat in the orange and lemon zests and juices.
  3. Stir in the flour mixture.
  4. Scrape the dough onto a greased baking sheet and form it into a long flat log.
  5. Sprinkle with cinnamon and pat almonds on top (make sure to press them in a fair bit or else they will mostly fall off).
  6. Bake at 350 degrees for 25 minutes. 
  7. Take the biscotti out and let it cool for about 10 minutes, so you can handle it easily.
  8. Cut the log into 3/4 inch slices.  Place the slices cut side down on the baking sheet and bake for another 5 - 10 minutes on each side, until golden brown and crispy.
